Flying Start Fajitas

Although it’s exhilarating to put the pedal to the metal and feel the G-force of rapid acceleration from a dead stop, real NASCAR races start with the cars in motion. So, by the time the green flag gets waved, the field is already flying around the track – hence the term “flying start.”

If you’re looking to get your next cookout or gathering off to a fast start, try this fiery recipe for fajitas. You can swap the steak for chicken, which is what we did, or use a combination of both. Check out the full recipe below. Happy grilling!

Ingredients

  • 1 whole beef flank steak (or about 5-6 chicken breasts)

  • 1/2 cup olive oil

  • 3 tablespoons Worcestershire sauce

  • 1/3 cup lime juice, fresh-squeezed

  • 3 cloves garlic, minced

  • 1 tablespoon cumin

  • 1 tablespoon chili powder

  • 1/2 teaspoon red pepper flakes

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon sugar

  • 2 whole medium onions, halved and sliced

  • 1 whole red bell pepper, sliced

  • 1 whole orange bell pepper, sliced

  • 1 whole green bell pepper, sliced

  • 1 whole yellow bell pepper, sliced

MARINADE:

In a dish, mix together olive oil, Worcestershire, lime juice, garlic, cumin, chili powder, red pepper flakes, salt, pepper, and sugar until combined. Pour half of the marinade into a separate dish. In one dish, place the flank steak, turning it over to coat. In the second dish, place all the veggies, turning to coat. Cover the dishes with plastic wrap and place in the fridge for at least 2 hours. 

Marinate the entire flank steak, or whole chicken breasts – cut for serving after they're cooked.

COOKING:

  1. Place a cast iron griddle inside of the smoker and set the heat to 320 F.

  2. Once the smoker is to temperature, place the whole flank steak or chicken breasts on griddle and cook for 20-30 minutes, turning once halfway through. We cooked chicken fajitas, so we cooked the meat until the internal temperature was above 165 F.

  3. After the meat is done, cover with tin foil and set in an oven or microwave to keep warm.

  4. Place cut veggies directly on the griddle and cook until slightly softened.

  5. Cut the meat into strips, serve with veggies and tortillas!
