Tendy 500

The Indy 500 is perhaps the most well-known race in all of motorsports. This mammoth contest often is attended by 300,000 spectators and serves as the American leg of the Triple Crown of Motorsport. For more than 100 years, its tradition and reputation have been unmatched in IndyCar racing.

So, what better way to honor an All-American race than with an All-American dish: good, old-fashioned fried chicken? This juicy, crispy recipe will definitely have you doing laps around the serving table for seconds and thirds. (And in another nod to the inspiration behind this recipe’s name, we begin the way the race ends – with a little bit of milk.)  

 

Ingredients:

1 cut-up chicken (we used about 4 pounds of tenderloin strips)

1 egg

1 stick of butter

1 tablespoon baking powder

1 tablespoon paprika

1/2 teaspoon pepper

1/2 teaspoon salt

1/2 teaspoon seasoned salt

1/3 cup evaporated milk

3/4 all-purpose Flour

 

Cooking:

1. Beat egg in small bowl. Add evaporated milk and stir thoroughly.

2. Mix flour, paprika, baking powder, salts, and pepper in a bowl.

3. Use a small bowl to melt butter in the microwave and then pour into a shallow metal baking pan large enough to hold the chicken pieces.

4. Dip chicken pieces in egg/milk mixture and then roll in flour mix. Place into a metal baking pan.

3. Set the grill to 375° and wait until this temperature stabilizes. Cook the chicken for 25 minutes. Then, reduce the heat to 325°, turn the chicken pieces over, and cook for 30 more minutes or until done.
